TURKEY SHEESH KEBABS
Serves 4
These spicy kebabs are excellent served over brown rice or inside pita at a cookout. Or try serving them with black beans and sweet potatoes for contrasting taste and color!
3 cloves garlic, minced |

2 tablespoons lemon juice |
1 medium onion, chopped |

2 tablespoons dried parsley |
1 pound ground turkey |

1/2 teaspoon chili powder |
1 pound soft tofu |

1/2 teaspoon black pepper |
1 tablespoon whole wheat flour |

salt to taste, optional |
In a bowl combine garlic and onion with ground turkey, tofu, flour, lemon juice, and spices. Use your hands to knead the mixture.
Divide sheesh kebabs into 8 equal long, cigar-shaped burgers.
Broil or grill until lightly browned. Serve hot over rice.
Garnish with a sprig of parsley or watercress.
This makes a great turkey meatloaf. Pat into ungreased bread pan and bake, uncovered, at 350 degrees for 1 hour.
